I read it in a book and can’t figure out the meaning of this sentence. Can somebody here plz explain it for me. Here is the whole paragraph: “The more groups that want to work with yours, the more picky you can be in the ones you select and what you ask from them. As they say, this ain’t chopped liver”.

It means that they are important. The phrase “What am I chopped liver?” means “What am I nobody?”.
